Pork Meatball Banh Mi

Ingredients

makes 4 sandwiches

Hot Chili Mayo

/3 cup mayonnaise

2

green onions, finely chopped

1

tablespoon hot chili sauce (such as sriracha)*

Meatballs

1

pound ground pork

1

/4 cup finely chopped fresh basil

4

garlic cloves, minced

3

green onions, finely chopped

1

tablespoon fish sauce (such as nam pla or nuoc nam)

1

tablespoon hot chili sauce (such as sriracha)

1

tablespoon sugar

2

teaspoons cornstarch

1

teaspoon freshly ground black pepper

1

teaspoon coarse kosher salt

Sandwiches

2

cups coarsely grated carrots

2

cups coarsely grated peeled daikon (Japanese white radish)**

1

/4 cup unseasoned rice vinegar

1

/4 cup sugar

1

teaspoon coarse kosher salt

1

tablespoon Asian sesame oil

4

10-inch-long individual baguettes or four 10-inch-long pieces French-bread baguette (cut from 2 baguettes)

Thinly sliced jalapeño chiles

large fresh cilantro sprigs

Preparation

    Step 1

    Stir all ingredients in small bowl. Season with salt. DO AHEAD Can be made 1 day ahead. Cover and chill.

    Step 2

    Line large dinner plate or pie dish with plastic wrap to prevent meatballs from sticking to the surface. Gently mix all ingredients in large bowl. Using moistened hands and scant tablespoonful for each, roll meat mixture into 1-inch meatballs. Arrange on plate. DO AHEAD–Can be made 1 day ahead. Cover and chill.

    Step 3

    Toss first 5 ingredients in medium bowl. Let stand at room temperature 1 hour, tossing occasionally.

    Step 4

    Preheat oven to 300°F. Heat sesame oil in large skillet over medium-high heat. Add half of meatballs. Sauté until brown and cooked through, turning meatballs often and lowering heat if browning too quickly, about 15 minutes. Transfer meatballs to rimmed baking sheet. Place in oven to keep warm. Repeat with remaining meatballs.

    Step 5

    Cut each baguette or baguette piece horizontally in half. Scoop out the inside of each piece of bread. Spread hot chili mayo on both sides of bread. Arrange jalapeños, then cilantro, on bottom halves. Top with 1/4 of meatballs. Drain pickled vegetables; place atop meatballs. Put top halves on each sandwich.

  • In answer to a previous question, they go in the oven just to keep them warm while the rest cook in the skillet. Now for my question: there are asterisks after the daikon and sriracha, but I see no explanation of what they mean.

  • Love it! When I have time, I prefer to julienne the carrots/radish to keep some of the crisp

  • Perfect! I substituted with ground turkey and didn't have daikon or jalapenos, but it didn't disappoint. The meatballs took about 5 minutes in the skillet and then another 15 in the oven - the whole thing came together quick and easy.

  • An apt example of a dish being greater than the sum of its parts. ALL the tastes and textures are here, wonderfully balanced, and delicious. I substituted pork for ground turkey; the meatballs cooked faster and stayed moist. I skipped the Japanese daikon and sliced carrots on a diagonal. They added crunch and kept for several days in the pickling juices. The garlic, green onion, fish sauce and sriracha mayo pack so much flavor that you can skip buying pricy ingredients if you're looking to save.

  • Amazing! Well worth the multiple steps. I chose to bake the meatballs instead (after brushing with the seasame oil), which was easier. Add mayo + leftover juices from pickles = instant salad dressing. Leftovers as salad to tomorrow :)
