We’re all about reinventing classic dishes in the air fryer, and we just love the way these hearty spuds crisp up as air-fryer potato wedges.

Potatoes and air fryers go very well together. Air-fryer french fries, potato chips and even baked potatoes come out golden and crispy. And these potato wedges are no exception. They’re perfect paired with any lunch or dinner, or just enjoyed as a wholesome snack any time of day. Pass the ketchup!

You’re probably got everything to make air-fryer potato wedges already on hand in your kitchen. Here are the essentials you’ll need:

  • Russet potatoes: Stick with a basic russet potato for this recipe. These types of potatoes have the right structure and starchiness for potato wedges and fries of all kinds.
  • Oil: A cooking oil with a high smoke point is a must for this recipe since it cooks at a high temp. The best oils for frying (and air-frying) include canola oil, vegetable oil and sunflower oil. Feel free to use any of these.
  • Seasonings: This recipe uses a mix of grated Parmesan, seasoned salt, onion powder, garlic powder, pepper and dried basil. A good spice blend adds great flavor to these wedges—even before you dunk them in the best ketchup brands.

Step 1: Prep the potatoes

Preheat your air fryer to 400°F. Refresh yourself on how to wash potatoes, then wash and scrub them. You can peel them for this recipe or leave them skin-on. Then, use a sharp chef’s knife to cut the potatoes into wedges. To do this, cut each potato in half lengthwise. Then, cut each half into three long wedges.

Step 2: Season the potatoes

In a large bowl, toss the wedges with oil. In a small bowl, stir together the grated Parmesan, basil, salt, onion powder, garlic powder, and pepper. Add the seasonings to the potatoes, and toss to coat evenly.

Step 3: Air-fry the potatoes

Arrange the wedges in a single layer in the basket of the air fryer. Cook until golden and tender, 15 to 20 minutes. Depending on the size of your air fryer, you may need to work in batches.

Editor’s Tip: For best results, shake the potatoes a few times during cooking. This will ensure the potatoes are evenly cooked and browned.

Recipe Variations

Our recipe already includes a homemade seasoning blend to flavor the taters, but you can use any of your favorite spice blends. Here are a few other ideas to get started:

  • Make a chile-lime mix: Toss tater wedges with fresh lime juice, chipotle pepper, salt and a dash of cayenne.
  • Add Greek-inspired flavors: Love Greek potatoes? Add that flavor to these air-fryer potato wedges. Toss the spuds with lemon juice, garlic powder, oregano and salt. When they come out of the oven, sprinkle with a bit of feta.
  • Sprinkle in dried Italian herbs: Lean into Italian flavor with dried basil, oregano, garlic and red pepper flakes, along with a sprinkle of salt and pepper.
  • Sprinkle with fresh spring herbs: Toss the cooked wedges with salt, pepper, dill and chives.

You can switch up this recipe by serving it with different dipping sauces. Here are some favorites (besides ketchup):

  • Whisk an aioli: This upgraded version of mayo is a great dip for potato wedges. Add even more flavor to your aioli by whisking in a bit of roasted garlic, chili crisp or sriracha.
  • Fry sauce: This homemade condiment is a combination of mayo, ketchup, pickle juice and a few other extras.
  • Pesto: The sprinkling of Parm on these taters means they pair well with Italian flavors. Make a homemade batch, or use any of the best store-bought pesto brands for dunking.

How to Store Air-Fryer Potato Wedges

Like french fries, it’s best to enjoy potato wedges fresh and hot. However, you can store the leftovers. Extra potato wedges will last in the fridge for up to four days. When you’re ready to enjoy them again, toss them back into the air fryer for five minutes to crisp them back up.

Can you use olive oil to make air-fryer potato wedges?

Olive oil has a relatively low smoke point—as low as 325ºF. This means it’ll start to smoke and burn at this temp. Instead, stick to oils with high smoke points like canola oil, sunflower oil or peanut oil.

Why are my air-fryer potato wedges not crispy?

Every air fryer works a little differently, so if your potato wedges aren’t crispy enough, check your appliance’s recommended timing and temperatures.

Also, make sure to place wedges in a single layer in your air-fryer basket. Overcrowding can prevent your wedges from getting crispy and golden.

Ingredients

  • 4 russet potatoes (about 2 pounds)
  • 2 teaspoons canola oil
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon seasoned salt
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • Prepared pesto, optional

Directions
